Esther + Matt - Hightower Beach Park Maternity

Esther and Matt are apart of our Fire Department family and I am so excited to meet Baby Girl Madeira next month. I can remember dancing at their wedding like it was yesterday, and I am so thrilled and honored to be apart of another wonderful milestone in their lives. Baby girl Madeira is already so loved and there's nothing better than growing up within a Fire Department community.

Esther is absolutely glowing. I mean, seriously, how breathtaking does she look? 


Strawberry Basil Avocado Chicken

OK. I'll make this short and sweet. I am seriously no Betty Crocker! I haven't stepped foot into my kitchen since before the baby was born, and it isn't very often (mostly never - sorry hubby) that I get to cook a meal for my family but I was determined to do so. Below is the recipe for this amazing dish. It's healthy, quick, flavorful, and a little sweet! If I can do it baby wearing a colic baby, you can to. (Baby wearing optional!)




1/4 cup kosher salt

4 cups warm water

4 boneless chicken breast

Salt and pepper - to taste

Strawberry Basil Avocado Salsa

1 cup strawberries - diced

1/4 cup basil leaves - chiffonaded

1/2 cup red onion - diced

1 tablespoon balsamic vinegarette

Salt - to taste


Stir together kosher salt and 4 cups warm water in a large bowl. Add chicken breast and let sit for 15 minutes. Start on your salsa: stir together all ingredients and salt to taste. Put chicken breast on the grill and cook about 18-23 minutes or until cooked through. Remove chicken from grill and let set about 5 minutes. Top with strawberry basil avocado salsa and ENJOY.

Seriously, guys, it's THAT easy and SO yummy.
